Maltitol is a disaccharide sugar alcohol produced from corn starch through enzymatic hydrolysis and hydrogenation. With sweetness close to sucrose (~90%), clean taste and half the calories, it is widely used in sugar-free candies, sugar-free chocolate and low-sugar bakery products.
